She counts just over 3,000 souls, has one of the most beautiful squares in Occitania and an old cathedral. She is in Ariege has just received a new distinction. One Michelin star.

Not for a restaurant, no, it’s a star of the Michelin Green Guide. And the municipality in question is Mirepoix. A must-see small town for those who want to discover Ariege.

Nine criteria

But what exactly are the stars of the Green Guide? It is a distinction that takes into account nine criteria: the feeling when discovering the site, the notoriety, the heritage wealth and richness of the visit, the presence of labels, the intrinsic or historical valuethe beauty and aesthetics, authenticity and charm, quality of reception and finally the quality of the visit.

Up to three stars

It is therefore of tourist interest here and the nine criteria are discussed and validated by a team of editors and authors without request or intervention from the town halls concerned.

To identify at first glance a site not to be missed, Michelin has chosen to establish a classification by order of interest with a star system. All three categories were renamed this year. One star means “worth the visit”, two “worth the detour” and three “worth the trip”.

Mirepoix is therefore “worth” the visit, explains the guide, who points out that “the medieval town is home to one of the most beautiful covered squares in Occitania” and that Place Maréchal-Leclerc is “charming and very colorful”, “everything seems to sum up Occitania”.

The guide also praises the beauties of the old Saint-Maurice cathedral, whose “nave is the widest of French Gothic churches. »

Mirepoix therefore enters this fairly closed circle of Michelin-starred Vert de Michelin, joining Foix, Saint-Lizier, the valleys of Couserans and the cave of Mas-d’Azil. As for Montségur and the cave of Niaux, they have two stars.
